1/2 cup(s) milk, fat-free
1/2 cup(s) yogurt, fat-free plain
4 egg white(s)
1 teaspoon vanilla extract
1/2 cup(s) sugar, brown
1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 teaspoon cinnamon, ground
1/2 teaspoon nutmeg, fresh
1/4 teaspoon salt
2 cup(s) flour, whole-wheat
2 cup(s) apple(s), Granny Smith, peeled, finely cubed
Preheat the oven to 350°F degrees. Prepare a muffin pan with muffin liners and
spray with non-stick cooking spray.
In a large bowl, mix together applesauce, milk, yogurt, egg whites, and vanilla.
Add sugar, baking powder, baking soda, cinnamon, nutmeg, and salt, and stir to
combine. Sprinkle flour over batter and fold together delicately, making sure to
not over-mix. Fold in apples.
Spoon the batter into the muffin cups. Bake for approximately 20-25 minutes, or
until an inserted toothpick comes out clean.
Muffins can be frozen in an airtight container, sealed freezer bag, or
individually wrapped for up to 2 months. For best results, freeze muffins
immediately after baking and cooling to room temperature.
